FFwD: Long and slow apples


It's Friday again and so it's Friday with Dorie time. This time we made a dessert with apples. The apples were combined with Orange zest, sugar, butter and a few spices. And then it had to bake for a real long time in the oven.
It was served with single cream, but not a usual single cream: this cream had a few extra ingredients. Some spices which added a special taste to the cream.

And the result, did we like it. Yes and no. It looked great, but it was to big. The apples were so strong of taste that the amount of apple was to much for one dessert. The taste was nice, but not in that amount. But I could imagine this apple dessert in a small portion in a grand dessert, with some vanilla ice cream perhaps?

It is interesting to hear everyone's views on this. I think the cream (or some other item - like ice cream or yogurt) was absolutely necessary to mellow out the flavor of the apples.

Your dish looks so delicate and pretty!
I baked my apples with cinnamon instead of the ginger and coriander and the taste was very mild and I think it made it easier to eat.

Interesting how you found it too strong. It does look wonderful! Mine were pale golden too, I wish they had caramelized a bit more.

What kind of apple did you use? I used Fujis and didn't feel as if the taste was too strong. I will admit that it was apples-in-your-face! Maybe the ginger/coriander flavoring was not to your liking. I used cinnamon. I do agree that we need a non-sweet cream or ice cream to tone the intensity of the apples down a bit. Your dessert does look very, very pretty.

I used cardamom in place of the coriander, since I was serving them sans cream. It's too bad the flavour was a little too strong.

I love your dish with the tulips!! ;) you did great with them! I thought I needed more of the ginger and cardamom in the apples...

Nana as well as my family loved these but I thought they were only "so so"...and way too much work and too long of an oven on for a "so so". Somewhere I have to add some crust :) Beautiful photos of your results, even if not a total hit.
